Nihari


Nihari is a traditional Pakistani and Indian beef stew dish. Here is a recipe for Nihari in Urdu:


Ingredients:


1 kg beef shanks or shin (with bone)

2 cups of water

1 onion, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon red chili powder

1 teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon cumin powder

Salt, to taste

1 tablespoon ghee

2 tablespoons wheat flour (atta)

1 tablespoon chopped coriander leaves (for garnish)

Instructions:


In a large pot, add the beef and water. Bring to a boil and then reduce the heat to low. Simmer for 2-3 hours, or until the meat is tender and falling off the bone.

In a separate pan, heat the ghee and sauté the onions until golden brown.

Add the ginger-garlic paste and sauté for a minute.

Add the red chili powder, turmeric powder, coriander powder, and cumin powder. Mix well and sauté for a minute.

Add this mixture to the pot with the beef and stir well.

Add the wheat flour and stir until the broth thickens.

Simmer for another 30 minutes.

Garnish with chopped coriander leaves and serve hot with naan or chapati.
