Polish Pierogi recipe 





Ingredients:


Dough:


2 cups all-purpose flour

1/2 tsp salt

1 egg

1/2 cup warm water

2 tbsp sour cream (optional)

Filling:


1 lb. potatoes, peeled and diced

1/2 cup cottage cheese

1/4 cup grated onion

1/4 cup chopped fresh parsley

Salt and pepper, to taste

Instructions:


1.In a large mixing bowl, combine the flour and salt.


2.In a separate bowl, beat the egg and mix in the warm water and sour cream (if using).


3.Slowly pour the wet ingredients into the flour mixture, stirring until a dough forms. 4.Knead the dough for a few minutes until it becomes smooth and elastic.


5.Cover the dough with a damp cloth and let it rest for 30 minutes.


6.While the dough is resting, prepare the filling by boiling the potatoes until they are tender. Drain and mash the potatoes with a fork or potato masher.


7.In a separate bowl, mix together the cottage cheese, grated onion, and chopped parsley. Season with salt and pepper to taste.


8.Roll out the dough on a floured surface to about 1/8 inch thickness.


9.Using a round cookie cutter or a glass, cut out circles from the dough.


10.Place a spoonful of the filling in the center of each dough circle.


11.Fold the dough over the filling and press the edges together to seal the pierogi.


12.Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water and cook for 3-5 minutes, or until they float to the surface.


13.Remove the pierogi from the water with a slotted spoon and drain on a paper towel.


14.Serve the pierogi with your favorite toppings, such as sour cream, butter, and fried onions.
