Ingredients:


4 large russet potatoes

Vegetable oil for frying

Salt

Instructions:


Peel and slice the potatoes into thick wedges.

Soak the fries in cold water for at least 30 minutes to remove excess starch.

Dry the fries thoroughly with paper towels or a clean dish towel.

Heat the oil in a deep fryer or large pot to 325°F (160°C).

Carefully add the fries to the hot oil, working in batches if necessary.

Fry the fries for 3-5 minutes, or until they are lightly golden brown.

Remove the fries from the oil with a slotted spoon and drain them on a paper towel-lined plate.

Increase the oil temperature to 375°F (190°C).

Fry the fries again for another 2-3 minutes, or until they are golden brown and crispy.

Remove the fries from the oil with a slotted spoon and drain them on a paper towel-lined plate.

Sprinkle with salt and serve immediately.
