Haleem Cooking Recipe



Haleem is a traditional dish from the Middle East and Central Asia, made with wheat, barley, meat (usually lamb or beef), and a mixture of spices. Here is a basic recipe for making haleem at home:


Ingredients:


1 lb boneless lamb or beef, cut into small pieces

1 cup wheat or barley

1 cup lentils (red or yellow)

1 cup chopped onion

3 cloves of garlic, minced

2 tbsp ghee or oil

2 tsp cumin powder

2 tsp coriander powder

1 tsp ginger powder

1 tsp turmeric powder

1 tsp red chili powder (optional)

Salt, to taste

Water, as needed

Instructions:


Soak the wheat or barley and lentils in water for at least 4 hours or overnight.

In a large pot or pressure cooker, heat ghee or oil and sauté the onions until they are golden brown.

Add the garlic and sauté for another minute.

Add the meat and cook until it is browned on all sides.

Drain the soaked wheat or barley and lentils and add them to the pot.

Add the cumin, coriander, ginger, turmeric, red chili powder (if using), and salt.

Stir to combine and add enough water to cover the ingredients by about 2 inches.

Bring to a boil and then reduce the heat to low and simmer for 1 hour.

Add more water as needed to ensure that the ingredients are well covered.

Once the meat is tender and the wheat or barley and lentils are well cooked, use a masher or blender to mash the ingredients.

Cook for another 15 minutes on low heat.

Serve hot with garnish of lemon, ginger and coriander.
