Gajar Ka Halwa Recipe


Ingredients:


1 kg carrots, grated

1 cup milk

1 cup heavy cream

1 cup sugar

1/2 cup ghee (clarified butter)

2 tsp cardamom powder

1/2 cup chopped nuts (almonds, pistachios, cashews)

A pinch of saffron (optional)

Instructions:


In a heavy-bottomed pan, heat ghee over medium heat.

Add grated carrots and sauté for about 10-15 minutes, or until the carrots start to soften.

Add milk, cream and sugar and stir to combine. Cook for about 15-20 minutes more, or until the milk has been absorbed and the halwa has thickened.

Stir in cardamom powder and saffron (if using), and cook for another 2-3 minutes.

Add chopped nuts and cook for another 2-3 minutes, or until the halwa is thick and sticky.

Serve hot garnished with more chopped nuts.
